Experimental Peppermint Cookies

Little minty stars. Yum!


Our daughter came up with her very own mint cookie recipe, so today, we baked them.  Turned out to be delicious!


Mint Star Cookies


  • 3 eggs
  • 1 pinch salt
  • 1 1/2 cups sugar
  • 1/2 tsp peppermint extract
  • 3 sticks of soft butter
  • 4 1/2 cups flour
  • 2 tsp baking powder


  • Mix in the above order.
  • Cool dough in the fridge for half an hour or longer.
  • Preheat oven to 350F.
  • Roll out the dough in batches and cut into star shapes.
  • Bake for 10 minutes or until golden brown, and enjoy!


These cookies are only mildly sweet, so icing can be added while the cookies are still warm, if desired.
